Your Role

  • Responsible for the kitchen and dishwashing department in the absence of the Executive Chef
  • Lead and develop all Sous Chefs and kitchen staff to work together to achieve excellence with passion and discipline
  • Ensure the homogeneity of all dishes, whether for the menu or buffet, and that they meet hotel standards and recipes
  • Ensure that all cooks are aware of the rules and objectives
  • Responsible for ordering in an organized and adapted manner to the volume
  • Responsible for daily management of food and labor costs
  • Be a 'Coach' and 'Mentor' for employees, creating an environment that allows employees to feel a sense of development, accomplishment, and belonging for a career in Fairmont & Raffles
  • Provide professional, courteous, and proactive services to clients while assisting colleagues
  • Communicate with restaurant managers to know client feedback
  • Maintain and improve the quality of served products through the creation of menus and creative presentation
  • Know all menu items, daily specials, and promotions perfectly
  • Visit tables and discuss with clients
  • Balance operational, administrative, and colleague needs while respecting deadlines
  • Ensure the cleanliness and maintenance of all work areas, utensils, and equipment
  • Participate in the development and management of schedules, as well as the follow-up and analysis of payroll with the Executive Chef;
  • Responsible with the Executive Chef for all internal Accor programs: EHC, AllSafe;
  • Actively participate in promoting our sales points on social media in collaboration with the marketing team
  • Actively participate in creating menus for all sales points and implementing them according to seasons;
  • Actively participate in training team members (kitchen and dishwashing);
  • Respect service-related policies, procedures, and standards for kitchens
  • Respect all hygiene and safety policies when handling food and beverages
  • Any other related tasks assigned by management

Requirements

  • Bilingual (English and French)
  • Minimum 10 years of culinary experience in a similar volume environment
  • Minimum 3 years of experience as a Sous Chef
  • Administrative experience and computer skills (Excel, Word) (Schedules, employee planning, food and labor cost management, menu creation…)
  • Pertinent experience in catering and external service will be considered an asset
  • Motivation and interaction with clients, ability to resolve problems quickly
  • Proactive with a keen eye for detail and ability to manage multiple functions simultaneously while respecting deadlines
  • Developed leadership skills that support employee development in an environment that promotes good interdepartmental relationships and teamwork
  • Available to work evenings and weekends
  • Conscientious and respectful of health and safety, hygiene, and sanitation rules to provide a perfectly safe environment
