Position Overview:

The Executive Kitchen Leader will oversee the culinary operations in the absence of the Executive Chef, ensuring the highest standards of food preparation and presentation.

Key Responsibilities:
  • Guide and support all Sous Chefs and kitchen personnel, fostering a culture of excellence and dedication.
  • Guarantee uniformity in the preparation of all culinary offerings, adhering to established recipes and quality benchmarks.
  • Monitor and manage daily food and labor expenditures effectively.
  • Act as a mentor and coach, promoting professional growth and satisfaction among team members.
  • Assist in the design and rollout of seasonal menus across various dining outlets.
  • Uphold and enforce kitchen protocols, procedures, and service excellence standards.
  • Maintain cleanliness and organization of all kitchen areas, tools, and equipment.
  • Collaborate with the marketing team to enhance the visibility of culinary offerings through social media initiatives.
  • Engage in team training and development activities.
  • Support the internal programs of Fairmont & Raffles.
Qualifications:
  • Fluency in both English and French.
  • A minimum of 10 years of culinary experience in a high-volume setting.
  • At least 3 years of experience in a Sous Chef role.
  • Proficient in administrative tasks with knowledge of Excel and Word.
  • Demonstrated leadership abilities with a focus on staff development.
  • Willingness to work evenings and weekends as required.
  • Commitment to health, safety, hygiene, and sanitation standards.
