City Experiences is seeking a Cook for our City Cruises operation in Gananoque.

*Please note, this is a seasonal/contract position*

About the Opportunity:

The successful Cook is technically competent in food preparation and production, contributes to general kitchen operations including receiving and storing provisions, is hospitable and cordial to coworkers and guests, and acts safely and responsibly. The Cook will provide an amazing experience to guests by providing quick service and high-quality food products in line with the menu and daily feature offerings.

Essential Duties & Responsibilities:

Provide exceptional hospitality to coworkers and guests as prescribed in our RESPECT Service System Inspect food preparation and service areas to ensure observance of safe, sanitary food-handling practices. Prepare high-quality food following prescribed recipes and production specifications. Receive and organize hot line food orders; portion, arrange, and garnish food for service. Receive and store food and supplies using proper food-handling techniques including stock rotation and monitoring temperatures of perishable products. Assist in routine cleaning of kitchen including daily cleaning of equipment and implements, sanitizing food preparation surfaces, and mopping floors. Heat, taste and adjust seasoning of and serve staff food as required. Maintain uniform and personal grooming in compliance with appearance standards. Communicate with other departments to plan production and coordinate activities. Communicate through supervisors, deficiencies or discrepancies including but not limited to equipment, repairs, shortages, spoilage, wasted product, people, hotel and departmental variations. Maintain awareness of product specifications to create a secondary quality checkpoint as stocks are put away. To refine and expand their culinary knowledge and skills by applying themselves to gain experience from all stations. Collaborate with management team to develop daily feature recipes. Develop personal culinary style within the specifications of the Company and its standards. Active participation in requisitioning, receiving and storage of products and mise-en-place. Inquiring about unknown products/production. Be pro-actively upgrading professional skills by questioning, inquiring and involvement in the operation. Ensure that the kitchen maintains compliance with all Company and Public Health rules and regulations at all times. Participate in pre-shift and post-shift line meetings. Greet guests as they enter premise. Describe dishes to guests. Deliver food to expediting station and maintain buffet areas in accordance with food runner training manual. Monitor and maintain buffet food and supplies throughout service. Stock hot boxes on the deck with ample food for service according to par levels. Set up and organize holding ovens and cold holding areas for service. Be prepared to begin work at scheduled time. Maintain uniform and personal grooming in compliance with appearance standards. Other duties as assigned by the manager or supervisor on duty.

Requirements & Qualifications:

or equivalent as recognized by the Ministry of Education Energetic and enthusiastic personality essential Minimum two (2) years’ kitchen experience required. Food Handler’s Certificate required. Hospitality or Culinary degree considered an asset. Will be closely supervised; must be able to take direction. Must be able to effectively understand and convey written and verbal information to coworkers and guests Must possess a service orientation – actively looking for ways to help others Will work for extended periods without sitting. Required to lift and move heavy items such as cases of provisions and large containers of prepared foods. Must have the ability to reach, bend, stoop, wipe, push, pull, move and/or lift. Ability to safely move up to 40lbs (18 kgs). Will be required to be available for work on weekends, evenings, and all major holidays. If required, wear assigned Personal Protective Equipment (PPE) ( non-slip shoes, gloves, weather appropriate dress attire, sun protection). Strong organizational, multitasking, and troubleshooting skills in a fast-paced work environment. Walk, stand, sit and work in all types of weather conditions for extended periods. Continually and repeatedly perform functions indoors and outdoors.
