Located in Old Montreal, within the renowned Hôtel Nelligan, the restaurant will open its doors in the summer of 2024. At Mama C, our contemporary Greek cuisine combines tradition and innovation, offering an exceptional gastronomic experience with sunny flavors and an exclusive selection of Greek wines.

We are looking for a passionate Grillardin to join our dynamic team. As a Grillardin, you will be responsible for the perfect grilling of meats and other dishes according to established standards. You will also be the only one in Canada to operate a Mibrasa oven, renowned for its charcoal grilling. You will ensure its cleaning and maintenance. Your role will include preparing your workstation efficiently to guarantee smooth and consistent production while supporting the chefs de partie to optimize mise en place and improve service on the line.

YOUR ROLE IS CRUCIAL

  • Master the art of grilling various types of meats, fish, and vegetables, ensuring precise and flavorful cooking.
  • Maintain and clean the Mibrasa oven to keep it performing optimally and ensure superior grilling quality.
  • Prepare meats, fish, and other ingredients, including advanced cutting and preparation techniques, while supervising commis to guarantee quality and precision.
  • Ensure the quick and efficient availability of ingredients for smooth dish execution by managing stock and anticipating needs.
  • Organize your workstation before services to ensure all utensils, equipment, and ingredients are accessible and ready for use.
  • Maintain an orderly and efficient workflow during service periods.
  • Play a key role in coordinating kitchen tasks, supervising and directing commis to ensure maximum efficiency.
  • Strictly follow recipes and apply appropriate culinary techniques.
  • Ensure perfect cooking and precise seasoning to maintain consistent quality and meet guest expectations.
  • Adhere to the establishment's aesthetic and plating standards by supervising dish presentation before service.
  • Actively maintain the cleanliness of workspaces, including preparation and food storage areas, by strictly adhering to hygiene and food safety standards.
  • Collaborate with colleagues to maintain a positive and productive work atmosphere.
  • Take pride and responsibility in every dish prepared and significantly contribute to enhancing the overall quality of dishes served.

WE NEED YOU IF

  • You have a professional studies diploma (DEP) in culinary arts or 3 to 4 years of experience in the culinary field, primarily in hotel establishments.
  • You have strong teamwork skills and the ability to ensure smooth communication, including the ability to communicate in both French and English with our international suppliers.
  • You possess strong leadership abilities, fostering team development and motivation.
  • You excel at stress management, maintaining calm and mastery while delivering high-level performance during busy periods.
