Mama C is the new project by Corner Collection, located in Old Montreal within the renowned Hôtel Nelligan, set to open in the summer of 2024. We Are Looking for an Experienced Chef de Partie to Join Our Dynamic and Passionate Team

As a chef de partie, you will be directly supervising your team and effectively managing your section. Your primary role will be to ensure the preparation and quality of dishes at every stage of their creation, strictly following recipes and applying appropriate culinary techniques. You will efficiently organize your workstation and maintain high standards of quality. Your ability to closely collaborate with the kitchen team will guarantee an exceptional and consistent culinary experience for our guests.

YOUR ROLE IS CRUCIAL

  • Ensure the preparation of meats, fish, and other ingredients, including advanced cutting and preparation techniques, while supervising commis to guarantee quality and precision.
  • Ensure the quick and efficient availability of ingredients for smooth dish execution by supervising stock management and anticipating needs.
  • Organize your workstation before service to ensure all utensils, equipment, and ingredients are accessible and ready for use.
  • Maintain an orderly and efficient workflow during service periods.
  • Play a key role in coordinating kitchen tasks, supervising, and directing commis to ensure maximum efficiency.
  • Rigorously follow recipes and apply appropriate culinary techniques.
  • Ensure perfect cooking and precise seasoning to maintain consistent quality and meet guest expectations.
  • Adhere to the establishment's aesthetic and plating standards, supervising dish presentation before service.
  • Actively participate in maintaining the cleanliness of workspaces, including preparation and food storage areas, by strictly adhering to hygiene and food safety standards.
  • Collaborate with colleagues to maintain a positive and productive work environment.
  • Take pride and responsibility in every dish prepared, significantly contributing to the overall quality of dishes served.

WE NEED YOU IF

  • You have a Professional Cooking Diploma (DEP) or 3 to 4 years of experience in cooking, mainly in hotel establishments.
  • You have a strong ability to work in a team and ensure smooth communication, with the capability to communicate in both French and English with our international suppliers.
  • You have proven leadership skills that foster team development and motivation.
  • You have excellent stress management skills, the ability to work calmly and composedly, and maintain a high level of execution during busy periods.
  • You have a well-developed sense of organization for efficient work and meeting deadlines.
  • You have the energy, endurance, and availability for a demanding role with flexible hours, including evenings, weekends, and holidays.
  • You maintain exemplary service standards while managing high guest volumes.
