Pastry Chef

We are seeking a skilled Pastry - First Cook to join our culinary team at Fairmont Chateau Lake Louise. As a key member of our pastry department, you will be responsible for preparing high-quality pastries, desserts, and other sweet treats for our guests.
Key Responsibilities- Review daily production sheets with the Pastry Chef/Chef de Partie and prepare necessary food items in a timely and efficient manner.
- Adhere to standardized recipes and specifications to maintain consistency and meet quality standards.
- Understand and work with Baker's Percentages to ensure accurate measurements.
- Knowledge of mixing techniques for sponges, breads, mousses, and other pastry items.
- Keep work station clean and organized, including fridges/freezers, countertops, and stovetops.
- Ensure station opening and closing procedures are carried out to standard.
- Minimize overproduction and food waste, and ensure proper rotation, labeling, and storing of food to reduce costs.
- Operate all kitchen equipment safely and efficiently.
- Ensure all food products are handled, stored, prepared, and served safely in accordance with hotel and government Food Safety guidelines.
- Report any deficiencies in kitchen equipment functionality or quality of food products to Sous Chef/CDP in a timely manner.
- Assume responsibility for basic operations of your station for short periods when required.
- Ensure a clean and safe working environment, and actively participate in health and safety initiatives.
- Adhere to all hotel environmental policies and initiatives.
- Minimum 3-4 years baking/pastry experience in high-volume production and ala carte plated desserts.
- Able to assist with wedding cakes and showpieces.
- Experience in a luxury hotel with comparable service and standards an asset.
- Red Seal Certificate (Journeyman's papers) or Recognized International Equivalent.
- Self-motivated, with the ability to make effective decisions.
- Demonstrates initiative, and the ability to work with minimal supervision.
- Ability to maintain high service levels under pressure.
- Ability to consistently stand and walk throughout shift.
