About the Role

We are seeking a skilled Pastry - First Cook to join our culinary team at Fairmont Chateau Lake Louise. As a key member of our pastry department, you will be responsible for preparing high-quality pastries, desserts, and other sweet treats for our guests.

Key Responsibilities
  • Prepare and present high-quality pastries, desserts, and other sweet treats in accordance with hotel standards.
  • Work closely with the Pastry Chef/Chef de Partie to ensure efficient production and high-quality products.
  • Adhere to standardized recipes and specifications to maintain consistency and quality.
  • Keep workstations clean and organized, and ensure proper rotation, labeling, and storing of food to reduce waste and costs.
  • Operate kitchen equipment safely and efficiently, and report any deficiencies to the Sous Chef/CDP.
  • Assume responsibility for the basic operations of the pastry station when required.
Requirements
  • Minimum 3-4 years of baking/pastry experience in high-volume production and ala carte plated desserts.
  • Ability to assist with wedding cakes and showpieces.
  • Experience in a luxury hotel with comparable service and standards an asset.
  • Red Seal Certificate (Journeyman's papers) or Recognized International Equivalent.
  • Self-motivated, with the ability to make effective decisions and work with minimal supervision.
