About the Role:
We are seeking a highly skilled Pastry - First Cook to join our team at Fairmont Chateau Lake Louise. As a key member of our culinary team, you will be responsible for preparing high-quality pastries and desserts in a fast-paced, high-volume production environment.
Key Responsibilities:
- Review daily production sheets with the Pastry Chef/Chef de Partie and prepare necessary food items in accordance with standards.
- Adhere to standardized recipes and specifications to maintain consistency and meet all standards.
- Understand and work by Baker's Percentages.
- Knowledge of mixing techniques for sponges, breads, mousses, etc.
- Keep work station clean and organized, including fridges/freezers, countertops, and stovetops.
- Ensure station opening and closing procedures are carried out to standard.
- Keep overproduction and food waste to a minimum, ensuring proper rotation, labeling, and storing of food to reduce food cost expense.
- Operate all kitchen equipment safely and conduct themselves with safety in mind at all times.
- Ensure all food products are handled, stored, prepared, and served safely in accordance with hotel and government Food Safety guidelines.
- Report any deficiencies in kitchen equipment functionality and quality of food products to Sous Chef/CDP in a timely fashion.
- Assume responsibility for basic operations of their station for short periods when required in the absence of the Chef De Partie or Demi – CDP.
- Ensure a clean and safe working environment and actively participate in health and safety initiatives.
- Adhere to all hotel environmental policies and initiatives.
- Carry out any other tasks as assigned.
Requirements:
- Minimum 3-4 years baking/pastry experience in high-volume production and ala carte plated desserts.
- Able to assist with wedding cakes and showpieces.
- Experience in a luxury hotel with comparable service and standards an asset.
- Red Seal Certificate (Journeyman's papers) or Recognized International Equivalent.
- Self-motivated, with the ability to make effective decisions.
- Demonstrates initiative, and the ability to work with minimal supervision.
- Ability to maintain high service levels under pressure.
- Ability to consistently stand and walk throughout shift.
