About the Role:

The Great Canadian Entertainment is seeking a highly skilled and experienced Executive Chef to join our team at the Great Blue Heron Casino & Hotel. As a key member of our culinary team, you will be responsible for providing exceptional food quality and service to our employees and guests.

Key Responsibilities:

  • Prepare and cook a variety of dishes for the buffet, a la carte menu, cafeteria, and catering events according to specifications and guest requests.
  • Collaborate with the Sous Chef to ensure all food items are prepared to the highest standards.
  • Control food waste and spoilage, and maintain a clean and sanitary kitchen environment.
  • Inspect work areas daily and report any hazards or defective equipment to the Sous Chef immediately.
  • Comply with all health and safety requirements, including the use of personal protective equipment (PPE) as required.
  • Perform other duties as required by the Sous Chef.

Requirements:

  • Formal culinary training with 4-5 years of progressive culinary experience in a large kitchen.
  • Extensive knowledge of kitchen equipment, food safety, and sanitation practices.
  • WHMIS certification.
  • Ability to follow and provide instructions in a friendly and professional manner.
  • Excellent knife handling skills.
  • Ability to analyze current inventory and develop daily prep lists to control food waste and spoilage.
  • Ability to prioritize and possess excellent time management and organizational skills.
  • Maintain a positive working relationship with fellow employees and management as part of a team.
  • Ability to work independently and under pressure in a fast-paced environment.
