Pastry Sous Chef

Are you a skilled pastry professional looking for a new challenge? We are seeking a Pastry Sous Chef to join our team at Fairmont Pacific Rim, a world-class hotel and restaurant environment.
Key Responsibilities:- Review daily operations with the pastry team and prepare food items in accordance with Fairmont standards.
- Conduct daily shift briefings with pastry team members and effectively manage food costs and production control.
- Supervise, provide guidance and training to pastry team members in all food preparation and execution of events.
- Assist with creating menus, recipes, pictures and training materials to ensure consistency and efficiency.
- Lead the charge on all Fairmont standards and train employees on menus and cooking procedures.
- Maintain kitchen cleanliness and follow food safety requirements.
- Ensure proper rotation of product in all chillers to minimize spoilage and follow all safety and sanitation policies when handling food.
- Apply 5 Diamond and 5 Star Service Standards at all times.
- Previous experience in a luxury hotel and restaurant environment is an asset.
- Strong knowledge of chocolate work and design, as well as restaurant dessert design.
- Creative and passionate about food and customer service.
- Able to give clear direction, set expectations and provide training to team members.
- Able to work without supervision and display sound decision-making skills.
- Ability to read, understand and follow recipes within guidelines.
- Ability to read a prep list and determine the sequence of job completion.
- Ability to multitask, prioritize and manage time efficiently.
- Strong organization skills and ability to listen, follow directions precisely.
- Stays current and knowledgeable of local and global cuisine trends.
- Able to work in a fast-paced, high-pressure environment.
- Excellent interpersonal and communication skills.
- Completion of a recognized culinary program and Food Safe Certification.
- A neat, well-groomed appearance as per hotel standards.
- Must be available to work a variety of shifts, including evenings, weekends and holidays.
