Job Title: Sous Chef

We are seeking a highly skilled and experienced Sous Chef to join our culinary team at Tigh Na Mara Seaside Spa Resort & Conference Centre.

Job Summary:

The Sous Chef will be responsible for assisting the Executive Chef in the planning, preparation, and presentation of food and beverages in our resort's restaurants and bars. This is a key role that requires strong leadership and organizational skills, as well as a passion for delivering exceptional culinary experiences.

Responsibilities:
  • Assist the Executive Chef in menu planning, food preparation, and presentation.
  • Supervise and train kitchen staff to ensure high-quality food and service standards.
  • Estimate food costs, labor costs, and inventory levels to ensure efficient kitchen operations.
  • Analyze operating costs and other data to identify areas for improvement.
  • Demonstrate new cooking techniques and equipment to kitchen staff.
  • Supervise activities of specialist chefs, chefs, cooks, and other kitchen workers.
  • Create new recipes and menus to enhance the culinary experience.
  • Instruct cooks in preparation, cooking, garnishing, and presentation of food.
  • Supervise cooks and other kitchen staff to ensure efficient kitchen operations.
  • Requisition food and kitchen supplies to maintain high-quality standards.
  • Arrange for equipment purchases and repairs to ensure efficient kitchen operations.
  • Plan and direct food preparation and cooking activities for multiple restaurants and bars.
  • Plan menus and ensure food meets quality standards.
  • Prepare dishes for customers with food allergies or intolerances.
  • Recruit and hire staff to maintain a high-performing kitchen team.
  • Supervise activities of sous-chefs, specialist chefs, chefs, and cooks to ensure efficient kitchen operations.
  • Train staff in preparation, cooking, and handling of food.
  • Lead and instruct individuals to achieve high-quality food and service standards.
Credentials:

Candidates must possess a Safe Food Handling certificate and have relevant culinary experience.

Work Conditions and Physical Capabilities:

This role requires working in a fast-paced environment, under pressure, with tight deadlines. The successful candidate must be able to handle heavy loads, work in a physically demanding environment, and maintain attention to detail.
