We are seeking a highly skilled Senior Culinary Manager to lead our culinary team in Northern Ontario. This role involves overseeing the development of menus, supervising culinary staff, and ensuring compliance with established standards to meet or exceed client expectations.

Key Responsibilities:
  • Develop and implement menu plans for retail, residential dining, commissary service, and catering
  • Create budgets and maintain food costs, focusing on minimizing expenses while ensuring high-quality products
  • Evaluate and improve food preparation techniques, presentation styles, and quality standards
  • Manage the requisition and purchase of food products, considering factors such as freshness, sustainability, and seasonality
  • Train and develop culinary staff, emphasizing best practices related to Fair Trade compliance and customer satisfaction
  • Liaise with head office support teams to ensure seamless communication and cooperation
  • Collaborate with chefs to create innovative food sampling menus that showcase our commitment to excellence
  • Plan and manage production schedules, maintaining equipment and optimizing workflow
  • Ensure compliance with Dana Hospitality's Seasonal Inspirations program and track use of seasonal ingredients for submission to head office
  • Maintain knowledge of government legislation and company policies related to food safety, sanitation, and labor regulations

The ideal candidate will have a minimum of three years' experience in a similar position, exposure to multi-unit management, and a Bachelor's degree or related culinary diploma. They should possess expertise in high-end catering, Food and Beverage Management systems, and financial management. Strong communication skills, assertiveness, and the ability to lead in a fast-paced environment are also essential.
