About the Role:
We are seeking an experienced Executive Sous Chef to join our culinary team at Fairmont Hotel Vancouver. As a key member of our leadership team, you will be responsible for overseeing the day-to-day operations of our kitchen, ensuring exceptional food quality, and leading a team of talented chefs.
Key Responsibilities:
- Provide direction and guidance to the culinary team to ensure seamless kitchen operations
- Collaborate with the Executive Chef to develop and implement menu concepts, recipes, and food presentation
- Lead daily food and beverage briefings to ensure effective communication and coordination
- Develop and maintain a positive and inclusive work environment, fostering a culture of teamwork and respect
- Monitor and control labor and operating expenses, ensuring cost-effective operations and maximizing profit
- Ensure compliance with health and safety regulations, maintaining a clean and safe kitchen environment
- Participate in culinary eco-audit spot checks and complete time/temperature control sheets as required
- Conduct regular walk-throughs of kitchen areas to ensure proper cleanliness and maintenance
- Develop and implement training programs for culinary colleagues, ensuring ongoing skill development and knowledge sharing
- Collaborate with food and beverage managers to create innovative promotional ideas and enhance guest experiences
Requirements:
- Minimum 4 years' experience in a senior culinary role, preferably in a luxury hotel environment
- Red Seal Certification (Cook) or international equivalent required
- Valid Food Safe certification required
- Proven track record of cost control, labor management, and inventory control
- Excellent leadership, communication, and interpersonal skills
- Ability to work well under pressure in a fast-paced environment
- Ability to work cohesively as part of a team, focusing on guest needs and satisfaction
