Job Summary

We are seeking a highly skilled and experienced Junior Sous Chef to join our culinary team at Château de Mercuès. As a key member of our kitchen staff, you will be responsible for managing the production and execution of all pastry menus, training and supervising a team of pastry cooks, and ensuring exceptional guest satisfaction.

Key Responsibilities
  • Manage the production and execution of all pastry menus, ensuring high-quality dishes and exceptional presentation.
  • Train and supervise a team of pastry cooks, providing guidance and support to ensure they meet the highest standards.
  • Participate in staff education plans, including on-the-job training, to maintain a positive and committed attitude.
  • Meet Health & Safety requirements, ensuring a safe and sanitary kitchen environment.
  • Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices.
  • Supervise, instruct, and assist with cleaning duties as required, maintaining a clean and safe work station.
  • Supervise and assist with receiving and storing food orders, ensuring timely and accurate delivery.
  • Oversee the work of all kitchen staff, receiving direction from the executive chef.
  • Help maintain a safe and sanitary kitchen, cleaning up spills and other potential hazards immediately.
  • Train newly hired kitchen staff and develop the skills of all kitchen staff.
  • Make sure adequate numbers of kitchen staff are scheduled to properly handle each day's business needs.
  • Participate in employee evaluations and necessary disciplinary actions.
  • Meet with guests in the dining room when required, ensuring exceptional guest satisfaction.
  • Place orders for recipe ingredients and other supplies, ensuring timely and accurate delivery.
  • Ensure that all standards of safety are strictly observed, looking for ways to save the facility money while still providing top-quality products and services.
Requirements
  • Minimum 6 years in a similar role, with a proven track record of success.
  • Ability to multi-task while remaining focused on the goal, with excellent verbal communication and leadership skills.
  • Be able to express creativity through food selections, preparation, and presentation, with a detail-oriented approach.
  • Ability to remain calm in high-stress situations, with a strong ability to solve problems quickly under pressure.
  • Able to lift 50+ lbs, stand for extended periods, and work a flexible schedule including nights, weekends, and holidays.
  • Excellent communication skills, with a positive attitude and well-groomed appearance.
  • Strong organizational skills, with the ability to absorb and embody Relais & Châteaux's 5C philosophy.
