Assistant Kitchen Manager

As a key member of the culinary team at Horizon North, the Assistant Kitchen Manager plays a vital role in the efficient operation of our kitchen facilities. This position operates on a rotational schedule of 20 days of work followed by 10 days off, with each workday consisting of 12 hours. Transportation to the work site is provided from a designated pickup location.
The Assistant Kitchen Manager will report directly to the Head Chef and will be tasked with managing daily kitchen activities, including the procurement of food supplies and menu development. This role also involves assisting in food preparation, serving, and maintaining control over both raw and cooked food items. Additionally, the Assistant Kitchen Manager will be responsible for training kitchen staff and ensuring adherence to Horizon North's Food Safety protocols.
Key Responsibilities Include:
- Assuming kitchen management duties during the Head Chef's scheduled absences
- Creating, presenting, and serving high-quality, diverse menus
- Overseeing kitchen staff to ensure productivity and compliance with Horizon North's policies, including health and safety standards
- Ensuring all food preparation aligns with FOODSAFE protocols and Horizon North's safety guidelines
- Managing food and labor resources within budgetary constraints
- Conducting bi-weekly inventory management and reporting
- Documenting daily expenditure in a spending report

QUALIFICATIONS
We are seeking candidates who meet the following criteria:
- Possession of a Journeyperson or interprovincial Red Seal Certificate
- Certification in SafeCheck advanced food safety or HACCP
- A minimum of 5 years of experience in the hospitality or food service sector
- At least 2 years of experience as an Assistant Kitchen Manager in hotels, resorts, restaurants, or remote lodges, with a strong understanding of both international and domestic cuisines
- Proficiency in computer applications such as Microsoft Excel, Microsoft Word, GFS, and Outlook
- In-depth knowledge of menu costing, recipe card implementation, and wage management
- Demonstrated leadership abilities, a positive demeanor, and effective communication skills
- A valid Class 5 Driver's License
