Job Summary

The Dexterra Group is seeking a highly skilled and experienced Sous Chef to join our team. As a key member of our culinary operations, you will be responsible for overseeing the day-to-day management of our kitchen, ensuring the highest standards of quality and safety.

Key Responsibilities

  • Manage kitchen operations, including menu planning, inventory control, and staff supervision.
  • Develop and implement effective kitchen systems and procedures to ensure efficiency and productivity.
  • Collaborate with the Chef to create and execute menus that meet the needs of our customers.
  • Ensure compliance with all relevant health and safety regulations, including FOODSAFE protocol and Horizon North safety guidelines.
  • Manage kitchen staff, including training, development, and performance management.
  • Monitor and control food and labor costs, ensuring they are within budgeted guidelines.
  • Prepare and present high-quality menus, ensuring presentation and taste meet the highest standards.

Requirements

  • Advanced food safety certification (SafeCheck or HACCP).
  • At least 5 years' experience in the hospitality/food service industry.
  • At least 2 years' experience as a Sous Chef in hotels, resorts, restaurants, and/or remote lodges.
  • Knowledge of computer programs, including Microsoft Excel, Microsoft Word, GFS, and Outlook.
  • Extensive knowledge of menu costing, recipe cards implementation, and wage control.
  • Effective leadership style, positive outgoing personality, and effective listening skills.
