Role Description

Marquee Steakhouse is looking for a Bar & Wine Manager to take full ownership of our bar operations. We need someone who can design thoughtful cocktail menus (2x/year), curate a wine program that elevates our steakhouse menu, and handle all day-to-day bar operations. You'll bring passion and expertise, working directly with the owner to build a beverage program worthy of our food quality.

Responsibilities

  • Design and execute biannual cocktail menus using seasonal and interesting ingredients that complement our steakhouse offerings
  • Curate and maintain our wine list with selections that enhance the dining experience, with preference for local vendors where appropriate
  • Manage all day-to-day bar operations including inventory management, stock tracking, cost control, and waste reduction
  • Coordinate ordering with ownership to maintain optimal inventory levels
  • Maintain detailed knowledge of all beverage offerings including preparation methods, ingredients, costs, and food pairings
  • Train serving staff and bartenders on beverage selections, preparation standards, and pairing recommendations to ensure consistent guest experience
  • Ensure bar area meets fine dining standards for cleanliness, presentation, and procedural compliance
  • Maintain compliance with AGCO regulations, health codes, and safety protocols
  • Develop and maintain relationships with beverage suppliers and local vendors
  • Monitor beverage program performance using Toast and MarginEdge systems; provide recommendations to ownership on pricing, purchasing, and program improvements
  • Oversee small bar team operations and scheduling

Requirements

  • 3+ years beverage management experience in fine dining or upscale casual dining
  • Sommelier certification (WSET Level 2 minimum, Level 3+ preferred) or equivalent wine expertise
  • Demonstrated experience developing cocktail programs and seasonal menus
  • Strong knowledge of wine regions, varietals, and food pairing principles
  • Proficiency in mixology techniques using fresh, seasonal, and unconventional ingredients
  • Experience with inventory management, cost control, and vendor relations
  • Familiarity with Toast POS and MarginEdge or similar restaurant management systems
  • Knowledge of AGCO regulations and Ontario liquor laws
  • Strong training and communication skills for staff development
  • Availability for flexible scheduling including evenings and weekends
  • Post-secondary education in hospitality, culinary management, or food & beverage is an asset
