We are looking for a Pastry Chef to lead our kitchen operations and oversee the entire production process. This is a key leadership role responsible for ensuring efficiency, quality, and creativity in our product offerings while aligning with the overall business goals.
**Responsibilities**:
- **Leadership & Management**:
- Lead the daily production of baked goods, pastries, smoothies, sandwiches, pizzas, focaccia sandwiches, salads, and bowls.
- Supervise and motivate kitchen staff, manage shift scheduling, and delegate tasks.
- Oversee the recruitment, onboarding, and training of pastry and kitchen staff.
- Foster a positive kitchen environment, encourage creativity, and resolve conflicts within the team.
- Coordinate with owners and front-of-house staff to align production with business needs.
- **Menu Development & Innovation**:
- Develop and refine recipes to ensure consistency, quality, and efficiency.
- Regularly innovate and update the menu, focusing on seasonal items, new product launches, and customer preferences.
- Integrate advanced pastry techniques (viennoiserie, plated desserts, sugar artistry, chocolate work) into the menu.
- Adapt recipes to align with customer demand, dietary restrictions, and business goals.
- **Production & Operational Efficiency**:
- Ensure consistent quality while managing high-volume production in a fast-paced environment.
- **Inventory Management**: Monitor and maintain inventory levels, order ingredients and supplies, track waste, and implement strategies to minimize waste.
- Adjust production levels based on demand, sales data, and forecast needs to optimize efficiency and cost-effectiveness.
- **Compliance & Safety**:
- Maintain high standards of food safety, sanitation, and hygiene in the kitchen.
- Ensure compliance with all food safety regulations (Food Safe Level 1 required, Level 2 a plus).
- Implement safety protocols for the kitchen and maintain a safe work environment.
- **Business Responsibilities**:
- Control costs, manage profitability, and optimize efficiency in kitchen operations.
- Build strong supplier relationships, negotiate pricing, and maintain quality standards.
- Manage food costs, portion control, and waste reduction strategies.
- Schedule staff to meet production needs, ensuring optimal staffing levels during peak and off-peak hours.
**Qualifications**:
- Pastry and Baking Certification is required.
- Minimum of 5 years of experience in a pastry/baking leadership role.
- Proven experience producing fresh pastries, sandwiches, baked goods, and other menu items in a high-volume kitchen.
- Experience with inventory management, including ordering, tracking stock, and minimizing waste.
- Experience with scheduling kitchen staff to meet production needs efficiently.
- Strong knowledge of advanced baking techniques, pastry arts, and food preparation.
- Experience with Google Suite (Docs, Sheets, etc.) for scheduling, inventory management, and documentation.
- Ability to adapt recipes to meet dietary preferences and adjust production levels.
- Ability to make accurate math calculations for scaling recipes and managing food costs.
- Experience in ordering supplies and managing supplier relationships.
- Ability to lead and organize a diverse kitchen team effectively.
- Excellent multitasking, time management, and problem-solving abilities.
- Food Safe Level 1 certification (required); Level 2 is a plus and will be required.
- Culinary degree or equivalent experience preferred.
- French Pastry Training is an asset.
