About the Role

We are seeking a highly skilled and experienced Sous Chef to join our team at St. John's Fish Exchange Kitchen & Wet Bar. As a key member of our culinary team, you will be responsible for maintaining the highest standards of food quality, presentation, and service.

Key Responsibilities
  • Food Cost Management: Maintain accurate records of food costs, consumption, sales, and inventory to ensure optimal profitability.
  • Operational Analysis: Analyze operating costs and other data to identify areas for improvement and implement cost-saving measures.
  • Culinary Innovation: Demonstrate new cooking techniques and equipment to our cooking staff, and create new recipes to enhance our menu offerings.
  • Team Supervision: Supervise the activities of specialist chefs, chefs, cooks, and other kitchen workers to ensure seamless kitchen operations.
  • Culinary Training: Instruct cooks in preparation, cooking, garnishing, and presentation of food to maintain high culinary standards.
  • Menu Development: Prepare and cook complete meals and specialty foods for events such as banquets, and create new menu items to cater to customer preferences.
  • Supply Chain Management: Requisition food and kitchen supplies to ensure timely delivery and optimal quality.
Requirements
  • Leadership: 3-4 years of experience in a senior kitchen role, with a proven track record of leadership and team management.
  • Culinary Expertise: Extensive knowledge of fish and seafood, meat, poultry, and game cuisine, with a focus on presentation and flavor.
  • Communication: Excellent oral communication skills, with the ability to effectively train and motivate kitchen staff.
  • Organizational: Strong organizational skills, with the ability to prioritize tasks, manage multiple projects, and meet deadlines.
  • Teamwork: A team player with a positive attitude, who is able to work effectively in a fast-paced kitchen environment.
