Culinary Leader for Dining Services

We are seeking a highly skilled Sous Chef to join our team at the Canadian Forces Base in Halifax. As the key culinary leader, you will be responsible for providing exceptional leadership in planning, production, and management of high-quality food services.
Key Responsibilities- Schedule and assign daily work activities to staff, ensuring timely completion of tasks.
- Train and guide culinary team members on job duties, food safety, and cooking methods.
- Cook and prepare food according to production guidelines and standardized recipes.
- Set up workstations with necessary ingredients and equipment.
- Prepare ingredients by measuring, weighing, mixing, chopping, trimming, and peeling food items.
- Safely use food utensils, including knives.
- Operate equipment such as ovens, stoves, slicers, mixers, etc.
- Bake, roast, broil, steam, and use various cooking methods on meats, vegetables, and other foods.
- Arrange, garnish, and portion food following established guidelines.
- Properly store food by following food safety policies and procedures.
- Clean and sanitize work areas, equipment, and utensils.
- 5+ years' experience in the culinary field required.
- 2+ years' experience in a leadership role required.
- Culinary degree or Red Seal considered an asset.
- Strong relationship building skills with clients and customers.
- Experience with food and labor costing considered an asset.
- Assertive, professional, and positive attitude with ability to lead in a stressful environment.
- Ability to work independently with limited supervision.
- This position requires occasional lifting, carrying, pushing, pulling of min. 25 lbs.
- This position requires standing for extended periods of time.
The estimated annual salary for this position is $65,000 - $80,000, depending on experience.
