Job Title: Chef de Partie

At Fairmont Jasper Park Lodge, we are seeking a highly skilled and experienced Chef de Partie to join our culinary team. As a key member of our kitchen team, you will be responsible for managing food preparation and presentation to ensure exceptional cuisine for our guests.

Key Responsibilities:
  • Supervise preparation and service of all food items for a la carte and buffet menus according to hotel recipes and standards.
  • Lead a team to produce the highest quality of food preparation and presentation.
  • Maintain proper rotation of product in all chillers to minimize wastage/spoilage.
  • Ensure the cleanliness and maintenance of all work areas, utensils, and equipment.
  • Adhere to the hotel's vehicle handling and safety policies while driving hotel and guest vehicles.
  • Follow all safety and sanitation policies when handling food and beverage.
Requirements:
  • Minimum 4 years well-rounded experience in a 4 or 5-star hotel or reputable restaurant required.
  • Valid Journeypersons' papers or equivalent required.
  • Diploma or Certification to a culinary program required.
  • Successful completion of Alberta's Food Handler Certification.
  • Supervisory experience an asset.
  • Certificate of completion on an intermediate level foodservice handling course is required.
  • Valid Alberta driver's license required.
  • Excellent Knife skills and safe handling required.
