Position OverviewWHAT'S THE ROLE?
Under the general oversight of the District Manager, the Culinary Operations Manager is responsible for ensuring the culinary excellence at the designated location. This encompasses the planning, preparation, and/or supervision of all meals in the kitchen, including catering, recipe development, and reviewing food preparation methods. The position also involves administrative and financial responsibilities such as ordering supplies, resolving discrepancies with vendors, creating and adhering to budgets for all culinary operations, and supervising and training all kitchen staff.
- Guide the team to prepare meals from scratch using local ingredients while continuously sourcing and developing innovative ideas to enhance profitability.
- Design and create menus and recipes for the cafeteria and catering events, integrating the company's promotional themes and healthy options while encouraging creative input from staff.
- Establish and implement food preparation schedules for all team members and recipes, ensuring an efficient and organized workflow for each dish.
- Prepare and/or oversee the preparation of food items for meals, daily specials, and catered events, including soups, salads, starches, meats, fish, poultry, vegetables, and desserts.
- Exhibit proficiency in various cooking techniques such as roasting, grilling, steaming, poaching, boiling, and baking.
- Step in to cook when necessary.
- Maintain comprehensive knowledge of the kitchen layout, recipes, service stations, and point of sale systems, providing additional support as needed.
- Lead the team by delegating tasks and ensuring adherence to best practices.
- Ensure high standards of product quality and customer satisfaction while fostering a learning environment conducive to team and organizational success.
- Ensure all staff comply with safety regulations and procedures during food preparation, including:
- Utilizing proper techniques with tools, supplies, and equipment (e.g., knives, ovens, cleaning materials).
- Wearing and correctly using appropriate personal protective equipment (e.g., non-slip shoes, cut-resistant gloves).
- Ensuring equipment is handled only by trained personnel and reporting any malfunctioning or repair needs.
- Adhering to FoodSafe and/or ServeSafe standards, including documenting all time-temperature sensitive food items.
- Following all health and safety and sanitation policies as mandated by applicable legislation and company policies.
- Collaborate with the Food Service Director or management and kitchen staff to manage costs by:
- Conducting physical inventories and maintaining stock levels.
- Ensuring proper food rotation in storage to minimize spoilage and waste (first in, first out).
- Controlling portion sizes to ensure recipe yields meet quantity and budget expectations.
- Implementing dishes that utilize seasonal ingredients.
- Identifying menu items that could be more cost-effective or replaced with higher yield options.
- Communicating with suppliers regarding inventory management, including ordering and receiving supplies, resolving discrepancies, and escalating unresolved issues to the District Manager.
- Schedule and coordinate staff assignments, considering business needs and individual staff skills.
- Train and develop staff in proper procedures and best practices while providing coaching to help them advance in their careers.
- Manage all cash handling processes, including daily deposits, financial entries, and invoice creation.
- Complete necessary administrative duties for the unit, including payroll functions, employee management, budgeting, and other operational tasks.
- Ensure the integrity of the cash flow process, ensuring compliance with security procedures through periodic checks.
- Stay informed about changes in legislation while seeking ways to improve processes, ensuring all updates are communicated to staff.
- Identify and recommend budget requirements for the assigned area.
- Participate in regularly scheduled Chef Manager meetings to discuss current operations and culinary success strategies.
- Act as an ambassador of goodwill, ethics, and excellent client relations on behalf of Dexterra Group.
- Maintain and uphold speed of service standards.
- Listen to customer feedback and respond professionally to all inquiries, directing concerns to higher management as necessary.
- Oversee franchise operations, adhering to all franchise regulations and guidelines.
- Engage in any construction or unit opening activities.
- Perform other duties as assigned.
WHO ARE WE LOOKING FOR?
- Red Seal Chef Certification.
- Five years of recent experience in the food service industry, leading high-volume culinary teams.
- ServeSafe and FoodSafe certifications.
- Previous experience in cost control and employee management.
- Demonstrated proficiency in computer skills; familiarity with Transact, Tims Zone, Clearview, ADP, and Gordon Food Service portals is considered an asset.
