Job Overview

POSITION SUMMARY

Under the general oversight of the Chef-Manager, the Culinary Operations Supervisor is tasked with leading a team of associates to create and serve a nutritious and appetizing menu in a school cafeteria environment. The Culinary Operations Supervisor will ensure the success of the café by acting as a safety advocate, innovating menu offerings, maintaining product freshness, and crafting visually appealing presentations.

Key responsibilities encompass:

  • Designing and curating menus and recipes for the café that integrate healthy and flavorful food choices while adhering to School Food and Beverage Policy PPM150.
  • Managing supply orders as needed.
  • Overseeing the preparation and service of grab-and-go, cold line, and hot line food items.
  • Ensuring compliance with all health and safety regulations and procedures, including relevant provincial and federal legislation, as well as FoodSafe and HACCP standards.
  • Confirming that all staff members have completed and passed necessary training, ensuring that applicable knowledge is effectively conveyed and utilized.
  • Ensuring staff utilize the techniques taught during training and properly handle all tools, supplies, and equipment provided (e.g., knives, ovens, cleaning materials).
  • Conducting training and coaching sessions with staff to guarantee adherence to proper procedures and best practices, while also assisting team members in their career advancement.
  • Verifying that employees have the appropriate personal protective equipment (e.g., non-slip shoes, cut-resistant gloves) and that it is used correctly.
  • Developing daily and weekly work plans for the team.
  • Leading the team in executing the daily and weekly work plan.
  • Monitoring sales performance and adjusting production volume and menu plans accordingly to optimize sales and minimize waste.
  • Evaluating tasks and processes to identify and implement improvements in efficiency and output while ensuring safety and consistency.
  • Inspecting equipment and reporting any repair needs (e.g., malfunctioning or damaged items), ensuring equipment safety, and properly securing any equipment that is unsafe until repaired.
  • Addressing employee concerns and collaborating with the team to foster a safe, healthy, and productive work environment.
  • Staying updated on operational changes and communicating these to staff while working with Senior Management to revise training policies and documentation.
  • Collaborating with kitchen staff and the Operations Manager to manage location costs through measures such as: conducting physical inventories, maintaining appropriate stock levels, ensuring proper food rotation to minimize spoilage and waste, portioning food items to meet recipe yields and budget expectations, and planning menus that leverage seasonal availability and excess inventory.
  • Acting as an ambassador of goodwill, ethics, and strong client relations at all times.
  • Stepping in to address guest concerns and resolve service-related issues as necessary.
  • Performing other duties as required.

Candidate Profile

QUALIFICATIONS

  • Proven culinary experience and excellence is essential.
  • A minimum of five years of experience in the food service sector leading high-volume culinary teams.
  • Certification in ServeSafe and/or FoodSafe is required.
  • Red Seal Chef certification is considered an asset.
  • A valid G driver's license with a clean driving record is advantageous.
  • Exceptional written and verbal communication skills.
  • Ability to effectively manage the concerns of employees, customers, and clients with professionalism.
  • Proficient in using computers and all related software, including POS systems.
  • Capable of lifting between 0-50 pounds from floor to shoulder height.
  • Frequent standing and walking are required.
  • Ability to work in varying temperature conditions.
  • Successful candidates must complete a Vulnerable Sector Record check.
