We are seeking a highly skilled and experienced Culinary Team Member to join our dynamic team at Fairmont Banff Springs. As a key member of our culinary team, you will be responsible for assisting the Sous Chef with the day-to-day operations of the kitchen, ensuring that all food is prepared and presented to the highest standards.
Key Responsibilities- Assist the Sous Chef in managing kitchen operations, including food preparation, cooking, and presentation.
- Work within the hotel's budget guidelines to minimize labor costs, food costs, and wastage.
- Train and mentor junior cooks on daily duties and requirements.
- Participate in daily shift briefings and contribute to the development of new menu ideas.
- Delegate and participate in the preparation, cooking, and servicing of all food items for a la carte and buffet menus.
- Input work orders for items needing repair and place orders for food in the BirchStreet system.
- Comply with and enforce all health and safety, sanitary, and nutrition regulations set by Fairmont Banff Springs and the culinary department.
- Adhere to and follow ALLSAFE health and safety protocols.
- Red Seal Journeyperson Cook Certification or international equivalency.
- Minimum 3 years' culinary experience, preferably in a luxury hotel or large kitchen environment.
- Safe Food Handling Certification required.
- Certificate or Diploma from a recognized Culinary School an asset.
- Possess strong leadership, organization, and communication skills.
- Works well with others, demonstrates good team spirit with an open mind.
- Able to lift, carry, and pull up to 50lbs and able to constantly stand and walk throughout shift.
- Able to withstand exposure to kitchen equipment, including large and small ovens, stoves, steam kettles, mixers, sheeter, fryers, rational ovens, steamers, tilt skillets, fridges, and freezers, as well as blast freezers.
- Self-motivated, with the ability to make effective decisions.
- Demonstrates initiative and the ability to work with minimal supervision.
- Ability to maintain high service levels under pressure.
