About the Role

We are seeking a highly skilled and experienced Sous Chef to join our team at St. John's Fish Exchange Kitchen & Wet Bar. As a key member of our culinary team, you will be responsible for maintaining the highest standards of food quality, presentation, and service.

Key Responsibilities
  • Food Cost Control: Maintain accurate records of food costs, consumption, sales, and inventory to ensure optimal profitability.
  • Operational Analysis: Analyze operating costs and other data to identify areas for improvement and implement cost-saving measures.
  • Culinary Innovation: Demonstrate new cooking techniques and equipment to our cooking staff, promoting a culture of innovation and excellence.
  • Team Leadership: Supervise the activities of specialist chefs, chefs, cooks, and other kitchen workers, providing guidance and support to ensure seamless kitchen operations.
  • Menu Development: Create new recipes and menus that showcase our culinary expertise and appeal to our discerning customers.
  • Culinary Training: Instruct cooks in preparation, cooking, garnishing, and presentation of food, ensuring that our team members have the skills and knowledge to deliver exceptional results.
  • Event Catering: Prepare and cook complete meals and specialty foods for events such as banquets, weddings, and corporate functions.
  • Staff Supervision: Supervise cooks and other kitchen staff, providing guidance and support to ensure that our kitchen runs smoothly and efficiently.
  • Inventory Management: Requisition food and kitchen supplies, ensuring that our kitchen is well-stocked and equipped to meet the demands of our customers.
Requirements
  • Leadership Experience: 3-4 years of experience in a senior kitchen role, with a proven track record of leadership and team management.
  • Culinary Expertise: Extensive knowledge of fish and seafood, meat, poultry, and game, with the ability to create innovative and delicious dishes.
  • Communication Skills: Excellent oral communication skills, with the ability to effectively communicate with staff, customers, and suppliers.
  • Interpersonal Skills: Dependability, efficient interpersonal skills, initiative, organized, reliability, and a team player attitude.
