We are currently seeking a highly motivated, service-oriented individual to join our Culinary Department as a full-time **STEWARDING MANAGER**, reporting to the Executive Chef.

**General Responsibilities**:
The Stewarding Manager is an integral member of the Culinary team, responsible for leading the Stewarding employees. They are responsible for managing primarily non-food production areas of the kitchen, to include the dish room, storage areas and other utility areas.

The Stewarding Manager is responsible for cleanliness and sanitation within the kitchen, for maintenance of key equipment and for the inventory, storage and distribution of the facility’s supply of items such as silver, china, glassware and linen.

**GENERAL RESPONSIBILITIES**:

- Support overall food and beverage operations by participating as part of the culinary leadership team.
- As part of the management team, strongly and positively influence team collaboration within Stewarding and between other departments and the Facility at all times.
- Provide hands-on supervision in running the day-to-day operation of Stewarding department.
- Contribute to the efficient operation of our business by contributing to weekly department scheduling, monitoring of department labour costs, budgets, and forecasts.
- Be responsible for recruitment; provide ongoing coaching, training, and performance feedback
- Meet with Chefs and/or Sous Chefs to discuss all equipment and operations needs and requirements for convention, catering and retail F&B events.
- Attend and participate in all relevant management and operations meetings.
- Assist culinary team in plating meals and delivering food to the banquet and retail areas.
- Assist in implementing and ensuring compliance with health and safety regulations, sanitary practices for food handling, safe equipment use, general cleanliness, and maintenance of kitchen and other areas.
- Point person for Vancouver Coastal health, ECOSURE and other food and beverage audits and maintaining sanitizer logs and other related documentation.
- Follow the requirements of and train employees on the Material Safety Data Sheets, WHMIS guidelines, and Personal Protective equipment (PPE) requirements.
- When assisting with food service, ensure that all food is stored and served at proper temperature.
- Establish checklists for all Stewarding shifts to ensure on-going cleanliness of dishroom, storage areas and utility areas per standard operating procedures.
- Ensure that use of chemical cleaning products and solutions is according to prescribed methods.
- Ensuring all stewarding related documents are maintained up-to-date.
- Supervise employees’ ability to follow loss prevention policies to prevent accidents and control costs; Investigate, report and follow up on employee incidents.
- Enforce proper cleaning routines for cookware and serviceware, including china, glassware and silverware, as well as stewarding and kitchen facilities, including all surfaces, walls and floors.
- Control inventory, storage and distribution of food service supplies.
- Monitor the receipt of supplies, manage storeroom orders and issue all china, silver and glass to necessary departments.
- Ensure all food and beverage outlets have sufficient equipment to perform adequately.
- Conduct monthly inventory of china, glass, silverware, linen, equipment and smallware.
- Generate monthly breakage audit documentation.
- Report inventory shortages and changes as per established standards to Executive Chef.
- Ensure Stewarding and Kitchen equipment is properly maintained by conducting regular inspections as a key role in preventative maintenance and equipment repairs/calling/tracking.
- Perform other related duties, tasks and responsibilities as required from time to time.

**KEY REQUIREMENTS**:

- Previous Stewarding experience in a leadership role in a similar, large-scale environment is strongly preferred.
- Working knowledge of relevant food safety regulations, sanitation, and general workplace safety standards. Food Safe Certification.
- Demonstrated financial acumen; P&L accountability and experience managing labour and other costs.
- Must have strong leadership and decision-making skills, with proven ability to lead a team and direct employees to assigned activities.
- Strong focus on service excellence and a positive attitude that contributes to collaboration and team work.
