La Glace is seeking a Culinary Director to help us execute our vision of producing high quality, luxury ice cream. As Culinary Director, you will provide leadership and inspiration to our production team, creating exciting and innovative products and while helping to maintain high standards of production and quality across our production facility in Toronto and our production and retail space in Vancouver.

La Glace is an award-winning French ice cream manufacturer in Canada, dedicated to creating delicious frozen treats using the finest ingredients. We are a small but growing team with a deep love for ice cream and big dreams. Our flagship store opened in Vancouver in 2017 and in 2023, we expanded into Toronto.

**What is the role?**
As Culinary Director, you will set the culinary standard for La Glace by leading our production team and being responsible for creating and producing delicious ice cream.
You will work closely with our sales and operations teams to develop and refresh our culinary strategy, including the continuous development of new recipes and culinary creations.
You will provide leadership to our back of house teams to execute this vision, by leading by example and by fostering a culture of creativity and collaboration. You will provide training and mentorship to our back of house teams and work closely with our back of house managers on the day-to-day functions and management of production.
**Core responsibilities**
- You will work closely with our senior management team in a leadership role to develop our culinary strategy which will guide our recipe and product development lifecycle, from ideation and formulation to piloting and then production roll out.
- You will lead the implementation of the culinary strategy, which primarily includes development of new ice cream flavours, recipes, and other pastry products. To support this, you will keep track of industry trends and innovations.
- You will take forward the culinary strategy by leading production and providing leadership and mentorship to the back of house team by fostering a culture of excellence and teamwork. This includes leading by example and communicating with team members to ensure effective coordination and cooperation between teams.
- You will work with our sales and events team to support the design of curated events for our key clients, including menu development.
- You will work with the management team to hire/recruit back of house team members and support the growth of the team through training and development.
- You will hold overall responsibility for ensuring that the high standards of our products and customer service are met, including quality assurance processes and the continuous improvement of back of house standard operating procedures.
- You will work with our back of house managers day-to-day activities, which will include: production planning and staff scheduling; developing production budgets and maintaining costings; inventory (and ingredient) management, procurement, and managing supplier relationships; maintenance of equipment; collaborating with our front of house team in Vancouver to ensure seamless integration between the two teams; and ensuring that production processes and spaces meet the required food handling, storage, and preparation compliance requirements and standards.

- You are adaptable - willing to do other duties as needed and have some flexibility in your schedule to work evenings and weekends as required.
- You have a background in pastry/dessert production, with experience in ice cream production preferred. A knowledge of or passion for French cuisine is also a bonus.
