Head Pastry Chef

Forno Cultura is a 3rd generation alternative baking space with a keen interest in serving our communities with artisanal crafted and the highest quality landscape of offerings. Our culinary approach is centered around Cucina de la Campagna and seasonality that is so robust with our local food growers.
**RESPONSIBILITIES**
In this hands-on position, you will be the lead in all production and planning for both the savory and the prepared foods program:
- Work alongside and guide team to ensure all production and preparation expectations are followed in accordance with company standards.
- Lead menu planning and seasonal calendars for all seasonal products
- Develop pars, and systems for flow and output as well as waste mitigation
- Create and maintain relationships with suppliers and maintain a competitive buying position in consideration
- Collaborate with suppliers to procure specialty and seasonal items that will create successful additions to the offerings of both departments.
- Identifies and implements continuous quality improvement procedures.
Talent Management and industry leadership in talent acquisition, education and development remains a priority for our long-term growth. Your role will be key in the onboarding, coaching, training, and mentoring of talent within these two departments.
- Provides positive leadership and guidance to team members in daily tasks and operations
- Develops an onboarding and training program for new members
- Create action plans for team in line with talent development goals
- Conducts coaching and one on one sessions with team as well as weekly and monthly department meetings.
- Maintains schedules, labor goals and targets
Creating opportunities for operational and administrative efficiencies will be key in the long-term sustainability of the two programs particularly in line with the company’s growth goals. You will lead:
- Production planning and ordering through relevant software
- Maintain records pertaining to purchases, sales, and requisitions for reporting and traceability purposes.
- Ensure accurate and timely delivery of products to serviced clients both internal and external
- Own the underlying P&L of your output with regards to mitigating wastage, controlling purchasing, safety of goods and assets and producing accurate inventory counting and reporting for Upper Management
Other general operational duties include:
- Implement and monitors compliance to standards and policies through understanding and execution of regulated agency standards
- Maintain the physical space through appropriate sanitation and maintenance and ensuring safety levels in all department areas.
- Maintain equipment and organization.
**REQUIREMENTS**
- Be an excellent communicator
- Value being part of a busy and productive team
- Be passionate about food and food history
- Have at least 6 years of professional pastry baking experience
**Salary**: $65,000.00-$70,000.00 per year
