Pastry Chef de Partie

The Pastry Chef de Partie is the team leaderand is responsible for the daytoday operation of the PastryKitchen. The Pastry Chef de Partie is the first point of contactfor Commis Chefs and Demi Chefs and supports them in their culinarydevelopment.
Duties andResponsibilities
- Reviewthe daily production sheets with team
- Prepareand when required delegate the production of fooditems
- Actively participate in the training ofculinary skills to junior staff
- Follow recipesand presentation specifications and prepare season and cook foodfollowing special dietary instructions whererequired
- Prepare list of food products requiredfor station and give to Sous Chef toorder
- Ensure that station opening and closingprocedures are carried out to standard
- Keepoverproduction and food waste to a minimum by ensuring properrotation labelling and storing of food
- Ensure aclean and organized work station including fridges/freezerscountertops and stovetops
- Ensure adherence toall sanitation and food production and storage procedures andcodes
- Assist with the enforcement of Health& Safety protocols and ensure a clean and safe workingenvironment for all staff
- Completion of otherrelated tasks asassigned
Qualifications:
- Culinary degreeand 4 years of baking and/or pastry OR 7 years of related bakingand/or pastry experience
- Experience andproficiency in both small and large scale baking operationsPrevious experience in a leadership role in thekitchen
- Valid food handlercertificate
- Able to meet the physical demandsof theposition
- Selfmotivated
- Ableto work under pressure
- Excellent communicationskills
