Cook Position - Lou Pécou
Lou Pécou is seeking an experienced and passionate cook to join our team. We are committed to craftsmanship at every level, making everything from scratch, including fermentation, baking, butchering, curing, and preserving. This role requires a strong foundation in traditional techniques, a deep respect for ingredients, and a dedication to excellence.
**Responsibilities**:
- Execute high-level cooking techniques with precision and consistency
- Work with fermentation, natural leavening, and sourdough baking
- Prepare artisan breads, pastries, and desserts
- Handle butchering, whole animal breakdown, and curing processes
- Preserve ingredients through pickling, salt curing, and oil preservation
- Utilize seasonal and foraged ingredients thoughtfully
- Maintain exceptional kitchen organization, cleanliness, and efficiency
- Collaborate with the team to ensure a smooth and professional working environment
Qualifications:
- Extensive experience in scratch cooking with a focus on artisanal techniques
- Strong understanding of traditional food preparation methods
- Ability to work in a fast-paced, high-standard environment
- Commitment to organization, precision, and teamwork
- A passion for craftsmanship, seasonality, and sustainability
