Executive Pastry Chef

As a key member of the Château de Mercuès team, the Junior Sous Chef will be responsible for managing the production and execution of all pastry menus offered by the hotel. This role requires a strong leader who can train and supervise a staff of pastry cooks to execute production in the pastry line.
Duties and Responsibilities
Provide exceptional service to all guests
Ensure excellence in guest satisfaction by maintaining a positive attitude
Participate in staff education plans, including on-the-job training
Maintain an acceptable attendance record
Meet Health & Safety requirements
Represent the hotel's service and hospitality standards
Exceed the expectations of internal and external customers
Inspect food preparation and serving areas to ensure safe, sanitary food-handling practices
Supervise, instruct, and assist with cleaning duties as required
Supervise and assist with receiving and storing food orders
Oversees the work of all kitchen staff
Receives direction from the executive chef
Maintains a safe and sanitary kitchen environment
Trains newly hired kitchen staff and develops the skills of all kitchen staff
Schedules adequate numbers of kitchen staff to handle each day's business needs
Participates in employee evaluations and necessary disciplinary actions
Meets with guests in the dining room when required
Places orders for recipe ingredients and other supplies
Ensures all safety standards are strictly observed
Looks for ways to save the facility money while providing top-quality products and services
Possesses the ability to handle any menu, from breakfast buffets to corporate lunch meetings and formal dinners
Travels to offsite areas for events
Assists with the development of dishes and menus
Performs other duties as required
Qualifications
Minimum 6 years of experience in a similar role
Ability to multi-task while remaining focused on the goal
Excellent verbal communication and leadership skills
Creativity in food selection, preparation, and presentation
Detail-oriented and able to remain calm in high-stress situations
Ability to solve problems quickly under pressure
Adequate upper body strength for heavy lifting and strong back and leg muscles for hours of standing, bending, and walking
Ability to communicate with, understand, empathize with, work with, and be tolerant of peers and supervisors
Ability to read, write, communicate, and comprehend verbal and written instructions in English
Accuracy, concision, and attention to detail
Effective time management skills to organize and prioritize workload
Work Conditions and Physical Requirements
Ability to interact professionally with guests and co-workers
Ability to lift 50+ pounds
Stand for extended periods
Flexible schedule, including nights, weekends, and holidays
Excellent communication skills

Well-groomed and polite

Ability to absorb and embody the 5C philosophy of Relais & Châteaux
Additional Information
Signing bonus: $500 (payable 3 months after start date)
Anniversary bonus: $2000 (payable on 2nd anniversary and every anniversary after that)
