Executive Sous Chef

The Executive Sous Chef will play a pivotal role in the success of Coast Hotels by delivering exceptional customer service and culinary expertise in the kitchen. Working closely with the Executive Chef and culinary team, this position will drive growth and development of the team, ensuring operational efficiencies, customer satisfaction, and profitability.
Key Responsibilities:
- Collaborate with the Executive Chef to establish the kitchen's strategic business plan, defining direction, setting goals, and managing change.
- Develop and implement systems, structures, and practices to manage results and drive performance.
- Lead and supervise the culinary team, ensuring food preparation and service delivery standards are consistently met.
- Work with the Executive Chef on menu engineering and product development, staying current and market-focused.
- Take responsibility for the tasks of the Executive Chef in their absence, ensuring seamless operations.
- Manage food inventory and labour costs to meet or exceed financial targets.
- Build a strong team through effective recruitment, communication, and team practices, creating a motivating and engaging environment.
- Monitor the quality of work and provide feedback to drive improvement.
- Identify potential leaders within the team and implement training and development programs.
- Address guest concerns and act on opportunities to exceed guest expectations, removing barriers to guest satisfaction.
- Ensure all health and safety standards are in compliance with regulations, promoting health and safety awareness and monitoring equipment performance.
Requirements:
- Chef de Cuisine certification or equivalent.
- Minimum 4 years of related experience, with 2 years of leading others.
- Red Seal certified.
- Food Safe certified.
- Hepatitis A vaccination recommended.
- Self-motivated team player with demonstrated organizational and interpersonal skills.
- Demonstrated ability to work in a fast-paced, multi-tasking team environment.
- Demonstrated advanced internal/external customer service philosophy.
- Intermediate level in the use of Microsoft Office Suite.
- Experience discussing performance issues with direct reports.
- Experience forecasting and budgeting.
- Thorough understanding of legislation and regulations as they apply to the area.
- Exemplifies Coast's core values and enjoys working in a culture of accountability.
- Able to work a flexible schedule, including evenings, weekends, and holidays.
