Key Responsibilities:

  • Ensure that all culinary team members have the necessary ingredients and supplies to prepare and serve menu items in a timely and efficient manner.
  • Supervise and coordinate the preparation of soups, stocks, and other preliminary food items in accordance with menu requirements.
  • Lead and motivate the culinary team to maintain high standards of quality and presentation.
  • Coordinate the setup and service of buffets and a la carte menu items for breakfast, lunch, and dinner.
  • Conduct inventory control and ensure the rotation of food stocks to maintain freshness and quality.
  • Review daily kitchen function sheets to ensure that all menu items are available and that special requests can be met.
  • Arrange for the preparation and delivery of team members' lunches.
  • Ensure that all kitchen staff adhere to high standards of cleanliness, safety, and food handling procedures.

Requirements:

  • Certificate in Culinary Arts from a recognized institution with completion of an apprenticeship program.
  • At least 5 years of progressive experience in a fine dining establishment.
  • Excellent decision-making and communication skills.
  • Knowledge of safety protocols and procedures.
  • Current Safe Food Handler's Certificate.
