We are seeking a highly skilled and experienced Sous Chef to join our team at the Banff Gondola. As a key member of our culinary team, you will be responsible for leading and inspiring our kitchen staff, while ensuring the highest standards of food quality and presentation.
Key Responsibilities- Lead and motivate the kitchen team to deliver exceptional culinary experiences
- Supervise food preparation and cooking, ensuring consistency and quality
- Coordinate daily kitchen tasks and activities, aligning with the direction of the Executive Chef and Executive Sous Chef
- Act with integrity, honesty, and knowledge that promotes the culture, values, and missions of Pursuit
- Develop and implement standardized recipes to ensure consistent quality and presentation
- Manage inventory, ordering, and budgeting to meet forecasted volumes and budgets
- Ensure all Health and Safety protocols are adhered to, as per AHS guidelines
- Oversee special catering events and assist the Executive Sous Chef with performance management and seasonal staffing levels
- Meet or exceed forecasted and budgeted COGS/LTR and operational budgets
- Journeyman's Red Seal or equivalent
- 3-5 years' management experience in high-volume food service and restaurant operations
- Experience in demonstration cooking, menu writing, development, and costing
- Strong background in high-volume/production kitchens and banquets
- Ability to manage in a diverse environment with a focus on customer service
- Experienced and proficient in the latest sanitation and HACCP standards
- Ability to control operating costs – labour and food
- Computer literacy is essential
- Being an effective administrator through inventory programs
- Highly organized with the ability to create consistency without compromising creativity
- Comfortable working on your feet for extended periods of time
- Adhere to the Pursuit grooming policy
- Standard first-aid or higher is an asset
