Job Summary

We are seeking a highly skilled Senior Banquet Operations Manager to join our team at Accor Hotel. This is a full-time position responsible for leading the kitchen team in Events Outlets and Colleague Restaurant.

About the Role
  • The successful candidate will have 7 years of cooking experience in a high volume, higher-end establishment or hold a culinary degree with 5 years of experience.
  • Prior Sous Chef experience in a luxury hotel, preferably in Banquets, is essential.
  • Experience and proficiency in both a la carte and production cooking are required.
Key Responsibilities
  1. Review daily production sheets with the team and plan tasks for the week.
  2. Prepare and delegate the production of food items when required.
  3. Actively participate in the training of culinary skills to junior staff.
  4. Supervise staff in the absence of the Executive Chef and Executive Sous Chef.
  5. Follow recipes and presentation specifications and prepare season and cook food following special dietary instructions where required.
  6. Order adequate amounts of food required for menu and to meet demand.
  7. Complete and approve time sheets and perform other required administrative responsibilities such as spec sheets & MeP sheets.
  8. Keep overproduction and food waste to a minimum by ensuring proper rotation, labelling, and storing of food.
  9. Ensure adherence to all sanitation and food production and storage procedures and codes.
  10. Quality control the outlets daily to ensure standards are met.
  11. Manage the shift time of hourly staff to control employee payroll costs.
  12. Assist with the enforcement of Health & Safety protocols and ensure a clean and safe working environment for all staff.
  13. Completion of other related tasks as assigned.
Qualifications and Experience
  • Culinary degree and 5 years of cooking experience OR 7 years of cooking experience in a high volume, higher-end establishment.
  • Valid food handler certificate.
  • Able to meet the physical demands of the position.
  • Self-motivated.
  • Able to work and make thoughtful, effective decisions while under pressure.
  • Excellent communication skills.
Working Conditions

This role requires regular presence in the workplace and does not allow remote work.

Salary Information

We offer a competitive salary estimated between $80,000 and $110,000 per year based on location and experience.
