About the Role:

We are seeking an experienced Executive Sous Chef to join our culinary team at Fairmont Hotel Vancouver. As a key member of our leadership team, you will be responsible for leading our culinary operations, developing menus, and ensuring exceptional food quality and safety standards.

Key Responsibilities:

  • Lead and manage a team of culinary professionals to deliver exceptional food quality and service.
  • Develop and implement menus that meet the hotel's culinary standards and exceed guest expectations.
  • Ensure compliance with food safety and quality standards, including HACCP and Vancouver Coastal Health regulations.
  • Manage inventory, labor, and operating expenses to meet budgetary requirements.
  • Collaborate with the Executive Chef and other department heads to achieve hotel-wide goals and objectives.
  • Provide training and development opportunities for team members to enhance their skills and knowledge.
  • Conduct daily walk-throughs to ensure kitchen cleanliness and organization.
  • Participate in monthly departmental communication meetings to discuss key issues and initiatives.

Requirements:

  • Minimum 4 years' experience in a senior culinary role, preferably in a luxury hotel environment.
  • Red Seal Certification (Cook) or international equivalent required.
  • Valid Food Safe certification required.
  • Previous experience in menu development, inventory control, and labor management an asset.
  • Strong leadership and communication skills, with the ability to motivate and inspire a team.
  • Computer literate in Microsoft Windows applications required.
