POSITION SUMMARY
We are seeking a dedicated Culinary Operations Manager to oversee the daily functions of our food services.
As a Culinary Leader, you will manage the daily activities of the kitchen, including procurement, inventory control, budgeting, menu development, staff training, and adherence to health and safety regulations as per Dexterra Group standards. Collaboration with clients to ensure satisfaction is key to this role.
Key Responsibilities:
Design and prepare innovative, made-from-scratch menus for guests Facilitate the training, development, and mentorship of kitchen staff Ensure all food preparation complies with FOODSAFE and Hazard Analysis Critical Control Points (HACCP) protocols, following Dexterra Group guidelines Provide service to clients and staff in a friendly and professional manner Utilize knowledge of dietary needs, including allergies, vegan, and vegetarian options in meal planning and preparation Conduct weekly inventory assessments.Required Qualifications
IDEAL CANDIDATE PROFILE
Certifications in Food Safety, Basic and Advanced First Aid Over 5 years of experience in the hospitality or food service sector Minimum of 3 years of expertise in culinary skills with a strong understanding of both international and domestic cuisines Proficiency in computer applications (Microsoft Excel, Microsoft Word, GFS, Outlook) Strong background in menu costing and inventory management Comprehensive knowledge of all kitchen areas, including Hot Kitchens, Cold Kitchens, Pastry/Bakery, Butchery, and Catering Demonstrated leadership abilities, with a positive and engaging personality and strong listening skills A commitment to ongoing professional development.
