Lead Culinary Specialist

POSITION SUMMARY

The Lead Culinary Specialist is a seasoned and adaptable chef who possesses comprehensive knowledge of kitchen operations and food production. This role involves assisting in managing daily kitchen activities and stepping in to oversee operations when the Kitchen Manager is unavailable. The Lead Culinary Specialist is responsible for a variety of tasks and ensures that production standards and food quality are consistently upheld by monitoring the work of other kitchen staff. The focus is on delivering outstanding service and creating unforgettable dining experiences for guests by ensuring timely food preparation and strict adherence to recipes and quality standards.

KEY RESPONSIBILITIES

  • Coordinate daily Banquet Event Orders (BEOs) and ensure all necessary preparations and production tasks are completed.
  • Maintain quality control and ensure timely preparation of all food items.
  • Oversee basic mise en place, cooking, quality, presentation, and prompt service of all dishes, including sauces and side items.
  • Assist with ordering, inventory management, cost control, and training of kitchen staff.
  • Proficient in operating all kitchen equipment.
  • Possess strong skills in various cooking techniques including roasting, grilling, poaching, and frying of meats, poultry, seafood, and vegetables, as well as preparing soups and stocks according to specifications.
  • Prepare meals accommodating guests with food allergies or special dietary requests.
  • Support the Chef in financial oversight by optimizing labor productivity and minimizing food waste.
  • Engage in daily discussions with the Chef regarding menus, specials, and event preparations, including reporting on leftover quantities.
  • Capable of independently preparing and cooking full-course meals and individual dishes as part of a team.
  • Ensure timely and high-quality service, with all prep levels ready for upcoming service periods.
  • Take a proactive role in maintaining organized fridges, rotating products, cleaning storerooms, and directing dish area activities during shifts.
  • Exemplify leadership by serving as a role model for colleagues in job proficiency, organization, and professionalism.
  • Identify and communicate any issues or concerns to the Chef or Sous Chef promptly.
  • Ensure cleanliness and functionality of kitchen work areas, including equipment and utensils, while maintaining food quality and minimizing waste.
  • Knowledgeable in specialized cooking equipment and food safety practices, ensuring safe meal preparation for guests with allergies.
  • Experience in a fast-paced kitchen environment, capable of multitasking effectively.
  • Ability to respond swiftly and adapt to various situations.
  • Experience in high-volume food preparation.
  • Flexibility to work in different areas of a hospitality kitchen, including banquets, prep, line cooking, fine dining, and pastry.
  • Address all guest inquiries and concerns to ensure complete satisfaction.
  • Conduct on-the-job training for new kitchen staff as needed.
  • Foster a friendly, professional, and productive relationship with coworkers and management across all departments.
  • Understand and implement all hotel safety and security protocols to maintain a secure work environment.
  • Comply with health and safety regulations, reporting unsafe practices or conditions, and documenting any workplace incidents.
  • Ensure proper use of Personal Protective Equipment as required.
  • Participate in all staff meetings.
  • Collaborate with all supporting departments to provide a seamless guest experience, embodying the vision of exceptional hospitality.
  • Perform any additional duties as assigned by management.

ENVIRONMENTAL FACTORS

  • Work in a hotel and hospitality kitchen environment.
  • Adapt to varying shifts including mornings, afternoons, evenings, weekends, and holidays.
  • Engage in a busy kitchen atmosphere.
  • Endure prolonged periods of standing and walking during peak service times.
  • Exert moderate to heavy physical effort.
  • Thrive in a fast-paced and dynamic industry with high performance demands.
  • Utilize manual dexterity and motor skills frequently.
  • Maintain a high level of sensory awareness, particularly sight and hearing.
  • Handle kitchen equipment with required manual dexterity.
  • Interact and communicate effectively with hotel teams and the public.
  • Meet physical demands including walking, standing, reaching, pulling, pushing, and lifting up to 40 lbs regularly.
  • Capable of moving, lifting, carrying, and placing objects weighing up to 30 lbs independently, and over 30 lbs with assistance.
  • Stand or walk for extended periods throughout the work shift.
  • Reach overhead and below the knees, including bending, twisting, pulling, and stooping.
  • Grasp, turn, and manipulate objects of various sizes and weights, requiring fine motor skills and hand-eye coordination.
  • Maintain a high level of sensory attention; sight and hearing.
  • Represent a defined and high grooming standard through uniform wear.

REQUIREMENTS

  • Minimum of 5 years of experience in kitchen or catering roles, preferably in a hotel setting.
  • At least 5 years of culinary experience, including a minimum of 3 years in short order cooking or completion of a post-secondary culinary program.
  • Excellent communication abilities.
  • A passion for delivering exceptional guest experiences.
  • Detail-oriented with strong organizational and multitasking skills.
  • Proven time management capabilities and ability to perform under pressure.
  • Ability to maintain composure in a fast-paced environment while interacting with guests and team members.
  • Availability to work nights, weekends, and holidays as necessary.
  • Legally authorized to work in Canada.
  • Current Food Safe Certification.

SALARY RANGE

$20.17 / hour
