Job Overview

The Lead Culinary Specialist plays a vital role in the preparation and cooking of meals, adhering to established recipes and production standards while ensuring compliance with food safety and sanitation protocols. The Lead Culinary Specialist may also oversee kitchen staff and assign tasks as necessary. Responsibilities may vary based on specific client needs and operational requirements.

Key Responsibilities


• Provides training and support to kitchen staff on their roles, food safety standards, and cooking techniques.

• Prepares and cooks meals according to standardized recipes and production guidelines.

• Organizes the workstation with all necessary ingredients and equipment.

• Measures, weighs, mixes, chops, trims, and peels food items as required.

• Utilizes kitchen utensils, including knives, safely and effectively.

• Operates kitchen equipment such as ovens, stoves, slicers, and mixers.

• Employs various cooking methods such as baking, roasting, broiling, and steaming for a range of foods.

• Arranges, garnishes, and portions dishes in accordance with established presentation standards.

• Ensures proper food storage practices are followed to maintain safety and quality.

• Cleans and sanitizes work areas, utensils, and equipment regularly.

• Maintains a high level of customer service with a positive demeanor towards guests and colleagues.

• Adheres to safety policies and procedures, particularly those related to food handling and sanitation.

• Safeguards company assets and ensures compliance with operational protocols.

• Maintains accurate production records and documentation.

Qualifications


• Prior experience in a similar role is preferred, particularly in settings serving 400+ guests.

• Required experience as a cook or in a related culinary position.

• Ability to work autonomously with minimal supervision is essential.

• Solid understanding of food preparation principles, cooking methods, and food safety regulations, including proper handling and storage.

• Food safety certification is mandatory.

• Basic math and counting skills are necessary.

• Strong interpersonal and communication skills, both written and verbal, are required.

This position may involve physical demands such as lifting, bending, pushing, pulling, and prolonged periods of walking and standing. Uniforms and/or Personal Protective Equipment (PPE) may be required.
