Position Overview

The Lead Culinary Specialist is essential in orchestrating the daily dining operations alongside the culinary team. Collaborating with kitchen management, this role focuses on the preparation of primary protein dishes for service, ensuring adherence to quality benchmarks. As a pivotal figure in the kitchen, the Lead Culinary Specialist will exhibit strong leadership skills and will work closely with management to oversee daily kitchen activities.

This position offers a unique work environment with a rotational schedule of 14 days on and 14 days off in a remote camp setting, featuring:

Key Responsibilities

  • Overseeing the preparation, production, and timely delivery of meals including breakfast, lunch, dinner, and snacks in line with established standards.
  • Cooking meals according to client schedules while adhering to menu and budgetary guidelines.
  • Ensuring sufficient quantities of menu items are prepared by following set production quotas.
  • Preparing food as close to serving time as possible, supervising portion control to guarantee compliance with specified serving sizes.
  • Coordinating kitchen staff involved in meal preparation and service, with the number of team members varying based on operational needs.
  • Maintaining proper storage and rotation of food supplies.
  • Managing food orders and inventory.
Candidate Profile

Qualifications:

  • Must successfully pass a drug and alcohol screening upon arrival.
  • Must reside within the designated operational area.
  • Previous experience in a culinary role is required.
  • Current Food Safe certification is mandatory.
  • Level 1 First Aid certification is advantageous.
  • Experience in large-scale camp cooking is preferred.
  • Red Seal or equivalent certifications are beneficial.
  • Experience in conducting weekly inventory assessments is a plus.
  • High standards for cleanliness and organization in the kitchen are essential.
  • Ability to meet the following physical demands:
    • Lift, carry, push, or pull up to 50 lbs.
    • Climb ladders or stairs.
    • Stand, walk, squat, kneel, or sit for extended periods.
    • Perform repetitive tasks requiring full use of both hands.
    • Work with arms extended or above shoulder height.
