Job Overview

The Lead Culinary Specialist is tasked with the preparation and cooking of meals utilizing established recipes and production standards while adhering to food safety, handling, and sanitation protocols. This role requires the safe operation of kitchen tools and equipment such as grills, fryers, ovens, and broilers. The Lead Culinary Specialist may also oversee kitchen staff and assign tasks as necessary. Responsibilities may differ based on specific client needs and operational requirements.

Key Responsibilities


• Educates and mentors kitchen staff on their roles, food safety standards, and cooking techniques.

• Prepares and cooks meals in accordance with production standards and standardized recipes.

• Organizes workstation with all necessary ingredients and tools.

• Measures, weighs, mixes, chops, trims, and peels food items as part of ingredient preparation.

• Utilizes kitchen utensils safely, including knives.

• Operates cooking equipment such as ovens, stoves, slicers, and mixers.

• Employs various cooking methods such as baking, roasting, broiling, and steaming for meats, vegetables, and other dishes.

• Arranges, garnishes, and portions meals according to established guidelines.

• Ensures proper food storage by adhering to safety policies and procedures.

• Cleans and sanitizes work areas, equipment, and utensils.

• Maintains a high level of customer service with a positive demeanor towards guests, clients, and colleagues.

• Adheres to safety policies and procedures, including food safety and sanitation standards.

• Safeguards company assets.

• Prepares and maintains production records.

Qualifications


• Previous experience in a similar role is preferred, especially in settings serving 400+ guests.

• Experience as a cook or in a related position is required.

• Ability to work independently with minimal supervision is essential.

• Solid understanding of food preparation principles, various cooking techniques, and food safety regulations including proper handling, sanitation, and storage.

• Food safety certification is mandatory.

• Basic math and counting skills are necessary.

• Strong interpersonal and communication skills, both written and verbal, are essential.

This position may involve physical demands such as lifting, bending, pushing, pulling, and extended periods of walking and standing. Uniforms and/or Personal Protective Equipment (PPE) may be required.
