Job Overview

POSITION SUMMARY
We are seeking a dedicated Culinary Operations Manager to oversee the daily functions of our food services.

As a Culinary Leader, your primary responsibility will be to manage the kitchen's daily operations, which includes ordering supplies, overseeing inventory, budgeting, menu planning, staff training, and ensuring compliance with health and safety regulations as per Dexterra Group standards. You will collaborate closely with clients to guarantee satisfaction.

Key Responsibilities:

  • Develop and prepare fresh, scratch-made menus for guests
  • Facilitate the training, development, and mentoring of kitchen staff
  • Ensure all food preparation adheres to FOODSAFE and Hazard Analysis Critical Control Points (HACCP) protocols, in line with Dexterra Group guidelines
  • Provide service to clients and staff in a friendly and professional manner
  • Utilize knowledge of dietary restrictions, including allergies, vegan, and vegetarian options in meal planning and preparation
  • Conduct weekly inventory assessments.

Required Qualifications

IDEAL CANDIDATE PROFILE

  • Certification in Food Safety, Basic and Advanced First Aid
  • Minimum of 5 years' experience in the hospitality or food service sector
  • At least 3 years' experience demonstrating cooking skills and knowledge of various cuisines
  • Proficiency in computer applications (Microsoft Excel, Microsoft Word, GFS, Outlook)
  • Strong understanding of menu costing and inventory management
  • Comprehensive knowledge of all kitchen areas, including Hot Kitchens, Cold Kitchens, Pastry/Bakery, Butchery, and Catering
  • Effective leadership abilities, a positive demeanor, and strong listening skills
  • Commitment to personal and professional growth.
