As a Chef de Partie, you will play a key role in leading our culinary team and contributing to the success of our hotel's culinary operations.

Key Responsibilities:

  • Assist the Sous Chef with the day-to-day operations of the kitchen, ensuring seamless execution of menus and services.
  • Work within the hotel's budget guidelines to minimize labor costs, food costs, and wastage.
  • Train, mentor, and lead cooks below the Chef de Partie level on daily duties and requirements.
  • Actively participate in daily shift briefings, sharing ideas and opinions to drive team performance.
  • Delegate and participate in the preparation, cooking, and servicing of all food items for a la carte and buffet menus, adhering to recipes and standards.
  • Input work orders for items needing repair and place orders for food in the BirchStreet system.
  • Comply with and enforce all health and safety, sanitary, and nutrition regulations set by Fairmont Banff Springs and the culinary department.
  • Adhere to and follow ALLSAFE health and safety protocols.
  • Perform other duties as assigned by the Sous Chef or Executive Chef.

Requirements:

  • Red Seal Journeyperson Cook Certification or international equivalency.
  • Minimum 3 years' culinary experience, preferably in a luxury hotel or large kitchen environment.
  • Red Seal Certificate (Journeyperson's papers) or recognized international equivalent required.
  • Safe Food Handling Certification required.
  • Certificate or Diploma from a recognized Culinary School an asset.
  • Possess strong leadership, organization, and communication skills.
  • Works well with others, demonstrates good team spirit with an open mind.
  • Able to lift, carry, and pull up to 50lbs and able to constantly stand and walk throughout shift.
  • Able to withstand exposure to kitchen equipment, including large and small ovens, stoves, steam kettles, mixers, sheeter, fryers, rational ovens, steamers, tilt skillets, fridges, and freezers, as well as blast freezers.
  • Self-motivated, with the ability to make effective decisions.
  • Demonstrates initiative and the ability to work with minimal supervision.
  • Ability to maintain high service levels under pressure.

Visa Requirements:

Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.
