We are currently in search of an Assistant Culinary Leader to become a vital part of the Dining Services team at Dalhousie University. In this role, you will collaborate closely with the Executive Chef and the Residence Dining Manager, contributing to the culinary direction and management of a premier food service operation.

Key Responsibilities- Assist in planning and guiding the culinary team under the direction of the Executive Chef to ensure daily food service operations meet or exceed both operational and financial objectives.
- Supervise and ensure compliance of Cooks and Food Service Workers with all operational standards and regulations.
- Analyze forecasts using the PRIMA menu management system.
- Adhere to all Occupational Health and Safety policies and procedures.
- Support the onboarding, training, and development of culinary staff.
- Manage product ordering and assist with monthly inventory processes.
- Maintain cleanliness and organization of storage areas, including the storeroom, refrigerator, and freezer.
- Standardize food production processes to guarantee consistent quality and adherence to recipes.
- Taste all dishes prior to service to ensure quality standards are met.
- Oversee food presentation and quality during service periods.
- Utilize a tablet-based interface for the menu management system (ENABLE+) to assist the culinary team.
- Perform additional duties as assigned.
- Minimum of 5 years of experience in the culinary field is required.
- At least 2 years of experience in a leadership capacity is preferred.
- Comprehensive knowledge of culinary practices and dietary requirements.
- A culinary degree or Red Seal certification is considered an asset.
- Strong interpersonal skills to build relationships with clients and customers.
- Experience in food and labor cost management.
- Professional demeanor with the ability to lead effectively in high-pressure situations.
- Flexibility to work evenings and weekends as needed.
- Ability to work independently with minimal supervision.
- Occasional lifting and carrying of items up to 25 lbs may be required.
