Job Title: Executive Sous Chef

At Château de Mercuès, we are seeking an exceptional Executive Sous Chef to join our culinary team. As a key member of our kitchen leadership, you will play a vital role in ensuring the highest standards of quality, creativity, and efficiency in our culinary operations.

Key Responsibilities:
  • Collaborate with the Executive Chef to develop and implement innovative menu offerings that showcase our culinary expertise.
  • Oversee and coordinate daily kitchen activities, ensuring seamless operations and exceptional customer experiences.
  • Train, mentor, and lead a high-performing kitchen team, fostering a culture of excellence and teamwork.
  • Manage inventory, ordering, and stock rotation to optimize kitchen efficiency and minimize waste.
  • Ensure adherence to food safety, sanitation, and hygiene standards, maintaining a clean and safe working environment.
  • Participate in menu development, tastings, and special culinary events, showcasing your creativity and expertise.
  • Assist in developing and implementing kitchen policies and procedures, ensuring compliance with industry standards.
  • Monitor and maintain kitchen equipment, coordinating repairs and maintenance to minimize downtime.
  • Collaborate with suppliers to source high-quality ingredients, supporting our commitment to excellence.
  • Contribute to cost control measures and budget management, ensuring fiscal responsibility.
  • Create and maintain a positive and collaborative work environment, promoting a culture of respect and inclusivity.
  • Step in for the Executive Chef in their absence, overseeing all kitchen operations and ensuring seamless continuity.
Qualifications:
  • Culinary degree or equivalent qualification.
  • Proven experience as a Sous Chef or Executive Sous Chef in a high-end restaurant.
  • Strong leadership and management skills, with a proven track record of success.
  • Excellent culinary and creative abilities, with a passion for innovation and excellence.
  • Knowledge of kitchen best practices, including health and safety standards.
  • Ability to handle high-pressure situations and maintain composure, even in fast-paced environments.
  • Effective communication and organizational skills, with a focus on teamwork and collaboration.
  • Ability to stand for extended periods, lift heavy kitchen equipment, and work in a high-pressure kitchen environment.
