Chef de Partie

As a Pastry Chef de Partie, you will play a pivotal role in our culinary team, overseeing and contributing to the success of both the Garde Manger and Pastry stations. You will be responsible for maintaining the highest standards of quality and consistency in all pastry and cold food preparations, while also providing leadership and support to the kitchen team.
**Key Duties and Responsibilities**:
1. **Overseeing and Training**:
- Provide guidance and training to cooks at the Garde Manger station.
- Ensure the integrity of each dish in the cold station is maintained.
2. **Supply Management**:
- Manage ordering supplies for Garde Manger and Pastry stations to maintain optimal stock levels and minimize waste.
3. **Food Hygiene and Safety**:
- Practice proper food hygiene and safety standards in handling produce and dry ingredients to prevent foodborne illness.
4. **Menu and Recipe Development**:
- Collaborate with the Chef de Cuisine in creating new dishes and recipes.
5. **Mise en Place Management**:
- Produce and manage mise en place for Garde Manger and Pastry Stations, including:
- Bread Production (Focaccia, Brioche, Sourdough, Pizza Dough)
- Laminated Pastries
- Cakes, Cookies, Muffins, etc.
- Sauces, Gels, Custards, Mousse
- Vinaigrettes and Dressings
- Basic and Advanced Vegetable Cuts
- Fish Butchery
- Brunch and Breakfast items (Eggs, Hollandaise, French Toast, Pancakes, Shakshuka, etc.)
6. **Equipment Management**:
- Ensure proper storage and handling of pastry equipment.
7. **Additional Duties**:
- Perform any additional duties as requested by the Chef de Cuisine and Executive Chef to support the smooth operation of the kitchen.
**Qualifications**:
- Proven experience as a Pastry Chef or Pastry Chef de Partie in a high-volume kitchen environment.
- Extensive knowledge of pastry and cold food preparation techniques.
- Strong leadership and communication skills.
- Ability to work efficiently under pressure.
- Culinary degree or relevant certification is preferred.
