**Responsibilities**:
1. Culinary Leadership:
- Lead and manage a team of chefs, cooks, and kitchen staff, fostering a positive and collaborative work environment.
- Develop and implement menus that showcase a fusion of Italian and Hakka cuisine, incorporating both traditional and contemporary elements.
- Create and refine recipes, paying attention to flavor profiles, plating techniques, and presentation to deliver an exceptional dining experience.
- Ensure that all dishes are prepared and presented to the highest standards, adhering to recipe specifications, portion sizes, and quality guidelines.
- Stay updated on culinary trends, techniques, and ingredients, and integrate them into the menu as appropriate.
- Collaborate with suppliers to source the freshest and highest quality ingredients for the kitchen.
2. Team Management and Training:
- Recruit, train, and mentor kitchen staff, fostering their professional growth and maintaining a high level of performance.
- Provide guidance and feedback to team members to ensure consistency, quality, and efficiency in food preparation and service.
- Establish and enforce hygiene and safety standards, ensuring compliance with local health regulations.
- Organize and conduct regular training sessions to enhance culinary skills and knowledge within the team.
3. Menu Development and Cost Control:
- Design and develop new dishes and menus that align with the restaurant's concept and clientele.
- Conduct regular menu tastings and evaluations to ensure the quality and consistency of dishes.
- Manage food costing and portion control to maintain profitability while delivering exceptional dining experiences.
- Collaborate with the management team to establish pricing strategies and maintain food cost targets.
**Requirements**:
- Proven experience as a Head Chef or Executive Chef, preferably in a fine dining establishment, with expertise in Italian
- Strong culinary skills with the ability to create and execute innovative, high-quality dishes that combine the best of both cuisines.
- Excellent leadership and team management abilities, with a track record of successfully leading and developing culinary teams.
- Extensive knowledge of food preparation techniques, flavor profiles, and plating aesthetics.
- Ability to work efficiently in a fast-paced environment, maintaining attention to detail and quality.
- Strong understanding of kitchen operations, including inventory management, food costing, and health and safety regulations.
- Exceptional organizational and communication skills.
