West Vancouver, Canada Capilano Golf and Country Club Full time

Capilano Golf & Country Club, in West Vancouver, is seeking an Executive Chef to lead our culinary team through the busy golf season and beyond. This position will report to the Director of Clubhouse Operations, and work closely with the Food & Beverage Services and Event Manager, to maintain all member service operations.

**Responsibilities**:

- The Executive Chef is the face of culinary operations and needs to be comfortable conversing and interacting in both the kitchen and dining rooms as they interface with multiple and diverse constituencies (members, staff, vendors, etc.) throughout the day. The EC is visible, present, always approachable, and enjoys member interactions. On floor presence is a must.
- The Executive Chef has knowledge of culinary classics while staying current on culinary trends and is well-versed in finding creative ways to accommodate a variety of member requests, food allergies and intolerances. The EC trains all staff in the proper handling of specialty dishes related to these topics.
- The Executive Chef has a demonstrated ability to provide consistent high-quality presentation across all staff including recipes, photos, tastings, trainings and ensures all food is consistently outstanding - from standard club fare to innovative offerings and special culinary events throughout all dining venues.
- The Executive Chef is responsible for providing quality and healthy employee meals throughout the mealtimes specified, keeping the level of food served appropriate to the volume of employees, even if the items may vary, and recognizing that the care and attention put into employee meals directly impacts the team morale and care and attention the team put into producing member meals.
- Manage scheduling and payroll processes in accordance with employment policies and budget targets.
- The Executive Chef leads the Heart of House initiatives relative to accident prevention, training, and retention of staff, as well as sanitation and safety standards. The kitchen must always be extremely organized and clean: from walk-ins to mise en place.
- Monitor inventory levels and order food supplies and equipment as needed.
- Assist in the development of operating budgets. Managing food and labour costs to meet budget goals.
- Address guest concerns, requests or issues.
- Ensure that department goals are communicated, understood, and met by all associates.
- Collaborate with other departments to ensure seamless operations and exceptional member experiences.
- Excellent time management with a keen sense of planning ahead.

**Requirements**:

- Minimum 5 years restaurant/club/hotel management experience.
- Experience managing a team of at least 10 kitchen staff.
- Excellent culinary skills, including menu development, food preparation and presentation.
- Strong planning, organizational, leadership and communication skills.
- Has strong financial acumen, experienced in budget management and forecasting as well as managing food and labor costs daily.
- A strong relationship builder with a history of collaboration with their GM, clubhouse manager, the committees with which they interface, and other departmental leaders.
- Acutely aware of the delicate menu balance that exists between offering standard club fare for tenured members and providing innovative options for members that belong to an up and coming demographic.
- Proficiency with MS Office (Outlook, Word, Excel) and Point-of-Sale software (Jonas).
- Previous private club experience an asset.
- Post-secondary degree, diploma or certificate in related field an asset. Red seal required.
- Multi-unit /event management experience an asset.
