We’re seeking a Sous Chef to join the Dining Services team at Dalhousie University, reporting to the Executive Chef with a dotted line to the Residence Dining Manager. Job Responsibilities In the absence of the Executive Chef, plan, direct and guide the culinary team in the execution of daily food service while meeting or exceeding operational and financial targets. Lead and monitor cooks and food service workers’ adherence to all Aramark operating standards and legislated standards, including company policy and procedure. Review forecasts in PRIMA. Maintain compliance with all OH&S policies, procedures, and required activities (e.g., updated safety boards, inventory on First Aid kits, proper chemical handling, monthly safety talks). Assist with onboarding, coaching, and developing culinary staff. Handle product ordering and weekly inventory. Ensure cleanliness and organization of storeroom, fridge, and freezer. Standardize production recipes to ensure consistent quality and recipe compliance. Taste all food ahead of serving to customers. Maintain food quality from presentation to line during service. Oversee use of ENABLE+ for the culinary team. Perform other duties as assigned. Qualifications 5+ years’ experience in the culinary field. 2+ years’ experience in a leadership role (preferred). Comprehensive culinary and dietary knowledge. Culinary degree or Red Seal (considered an asset). Strong relationship‑building skills with clients and customers. Experience with food and labour costing. Assertive, professional, and positive in a stressful environment. Flexible, with availability for evenings and weekends. Ability to work independently with limited supervision. Requires occasional lifting, carrying, pushing, pulling of up to 25 lbs.
