The Vision
Noyaa is more than a restaurant; it is a celebration of the ancient Silk Road, where the refined techniques of the East meet the vibrant, sun-drenched flavors of the Mediterranean. We are seeking a Sushi Chef who views the Omakase counter as a stage and every dish as a crossroads of culture.
As a key leader in our kitchen, you will curate an immersive dining experience that honours Japanese tradition while fearlessly integrating global influences. You will serve as the secondary authority at our Omakase bar, maintaining the Executive Chef's vision and leading the team with poise, creativity, and discipline.
Key Responsibilities
- Artistry & Execution: Craft exquisite sushi, sashimi, and fusion menu items that blend premium seasonal fish with Mediterranean accents (e.g. citrus, rare spices, and aromatics).
- Omakase Leadership: Lead our signature Omakase experience, engaging guests with deep knowledge of fish provenance, technique, and the "Silk Road" narrative.
- Team Mentorship: Supervise and inspire the sushi team, ensuring impeccable standards of prep and presentation are met, especially in the absence of the Executive Chef.
- Operational Excellence: Manage the sushi bar's daily operations, including meticulous inventory control of high-end seafood and specialized dry goods.
- Quality Mastery: Uphold rigorous standards for fish butchery, rice preparation, and temperature control.
- Collaborative Innovation: Work alongside the Executive Chef to develop seasonal specials that push the boundaries of Asian-Mediterranean fusion.
- Sanitation & Safety: Maintain a pristine workspace that exceeds Toronto Public Health standards, ensuring the highest level of food safety and organization.
The Ideal Candidate
- Proven Pedigree: Minimum of 5–7 years of experience in high-end sushi environments, with a track record of leadership in upscale or Michelin-standard settings.
- Global Palate: A deep understanding of Japanese fundamentals paired with a curiosity for Mediterranean ingredients and flavor profiles.
- Masterful Technique: Exceptional knife skills and a "zero-waste" philosophy regarding premium proteins.
- Commanding Presence: You are a natural host who thrives in the spotlight of an open kitchen, providing a sophisticated and hospitable guest experience.
- Leadership Maturity: The ability to manage kitchen workflow, mentor junior staff, and maintain a calm, professional "center" during high-volume service.
